Archival Spirits specializes in aperitif and digestif wines. The mission is quite specific - to produce rare and otherwise forgotten beverages for contemporary drinkers. After several years consulting winemaking manuals, botany journals, and cocktail recipes from the turn of the past century, we seek to revive the art and science of good drinking.

How did we get here? As a young, wide-eyed chef, I worked my way through some pretty nice restaurants in Northern Italy and Southern France. I felt like Alice walking through the looking glass. I expected the fine food and wine, but did not anticipate the array of aperitif and digestivi that defined each province.

Why Archival? After nearly a decade of work as an archivist and professor of history, I set out to recreate the kinds of aperitif and digestif I’d experienced in the cafés and restaurants of Europe. Digging deep into winemaking manuals and techniques from the turn of the past century, I adapt lost aperitif and digestif formulas for the contemporary palate.
